Christmas Echoes Through the Winery

23 December 2021 | Sababay Winery, Gianyar, Bali

Most Christmas performances take place in churches, theatres, or concert halls. On the evening of 23 December 2021, Bali Community Choir found itself singing somewhere entirely different—a working winery where towering stainless-steel fermentation tanks became the backdrop for an unforgettable Christmas celebration.

Hosted at Sababay Winery in Gianyar, the Christmas Pop-Up Dinner transformed an industrial production space into an elegant dining venue. Beneath warm festive lighting and a towering Christmas tree, more than eighty guests gathered to enjoy an evening where fine dining and live music unfolded side by side. From the moment the first guests arrived, the choir wasn’t simply part of the programme—it became part of the experience.

Music Before the First Course

Rather than waiting for guests to take their seats, choir members welcomed them as they arrived.

Christmas songs drifted through the reception area as singers appeared among the crowd, gently drawing guests towards the dining hall. Instead of walking into dinner, guests found themselves following the music.

It was an unexpected beginning that immediately changed the atmosphere. Conversations paused, smiles appeared, and phones were lifted to capture the moment as music became everyone’s first welcome of the evening.

Turning a Winery into a Performance Space

One of the evening’s greatest strengths was the way music moved with the event.

Instead of remaining on a single stage, the choir performed throughout the winery, allowing each piece to emerge naturally as the evening unfolded. The towering wine tanks, dramatic lighting and long banquet table became part of the performance itself, giving every musical moment a distinctive setting that could only have happened in this place.

Later, soloists surprised diners by appearing on the overhead walkway above the winery floor. Their voices floated across the room from above, creating a moment of quiet wonder before the evening continued.

When the Audience Joined In

One performance stood out for the joy it created.

As the choir sang a South African song in Zulu, the rhythm quickly spread beyond the singers themselves. Guests began clapping, swaying and smiling, with some joining the movement encouraged by the choir. Language became unimportant as music created a shared moment between people from many different backgrounds.

For Bali Community Choir, whose membership brings together Indonesians and expatriates from around the world, it was a natural reflection of what community singing makes possible: people connecting through participation rather than performance alone.

Building Towards the Final Chorus

Throughout dinner, music continued to appear in different forms.

Strolling singers moved among the tables. A violinist added another layer to the evening’s programme. A graceful dance performance offered a quiet contrast before the choir gathered one final time.

The closing notes of Handel’s Hallelujah Chorus echoed through the winery, filling the vast industrial space with voices that carried well beyond the dining tables. It was a powerful ending—not because it was dramatic, but because it brought together everything the evening had been about: celebration, collaboration and the simple pleasure of sharing music with others.

With Gratitude

Our heartfelt thanks go to Sababay Winery, Mozaic Restaurant, and Jack Daniels of Bali Discovery for inviting Bali Community Choir to be part of this remarkable Christmas celebration.

It was a privilege to share music in such an imaginative setting alongside a team committed to creating a memorable experience for every guest. We value partnerships that bring people together through creativity, hospitality, and community, and we are grateful to have been part of an evening where each element complemented the others so beautifully.

Looking Back

Performing at Sababay Winery reminded us that memorable concerts are shaped as much by people as by places.

Whether singing in community venues, hotels, outdoor festivals or unexpected locations like a winery, Bali Community Choir seeks to create experiences that invite people to participate, connect and celebrate together.

On this December evening, Christmas was celebrated not only through music, but through the conversations, laughter and shared moments that grew around it. Long after the final chorus faded, those moments remained part of the memory of the night.
